“I always thought that people who owned restaurants were a bit crazy. But I always toyed with the idea of opening something myself.
I used to work for a handful of different corporations, and they all kept downsizing or dramatically changing their business models. Finally, during the recession, I said, “You know what, I’m tired of working for other people. I’m going to do something for myself.”
Historically, there has always been a cheese shop in Federal Hill. However, there was a big chunk of time in the early 2000’s where we had no cheese shops, so I felt there was a need. Plus, I love specialty food culture."
“From there, it just kind of happened. I didn’t really sit here and plan it for years.
My goal was to make a specialty shop where you could come and taste the cheese before you bought it. I wanted my shop to be a much more personal experience than what you might experience at a supermarket.
People find all the differences between various cheeses fascinating — there’s a cheese for almost every day of the year. You’ve got a story to tell with so many of them, and that’s fun too.”
