“Before opening the shop, I was the type of person to sleep until noon if I could … but now, depending on the day of the week, I come into the shop anywhere between 9 and 11 at night. So one of the main benefits is that I can’t really drink anymore. If you really don’t want to be an alcoholic, start going into work at 9 at night.”
"Most people work 9-to-5, but I’m in bed by 5pm. So with this type of business, you learn who your true friends are real quick. You either have people that make the effort to see you, or you have people who just can’t make the time work and they sorta disappear from your life."
“Originally, Emily was just my chef. But, spending 80+ hours a week with someone totally changes your perspective on everything — so yeah, eventually we fell in love, and the rest is history."
"We both really enjoy running the shop. If you love what you do, it doesn't really matter what hours you work, or how you work. Don’t get me wrong, there are days where I’m just done. But in reality, I love this. It’s what I want to do.
Plus, on our days off, we sleep in until 3am. The world is peaceful at 3am. I can see the sunrise from my back porch. It’s beautiful.
I definitely get to experience a different side of life."
