“I lost my father when he was 41 years old, and then I lost my mother 10 years later. After I lost my father, I had to do a lot for myself and my family because I was the oldest son. During that time, I realized that life is short, we pass by, and so we have to make the most of our time.
I had a good father and mother so I received a lot of love from them, a lot of love. I believe that if you have received a lot, you have to give as much to others as possible. That’s what I’ve done my whole life. One way I do that is by making food that people love to eat."
"I had two restaurants in Greece. I opened the first one when I was 21. I loved it from the start. Good food makes people happy, and I like to make people happy. In 2010, the depression came so I had to shut both restaurants down and move to the United States for more opportunities."
"I’ve never worked for anyone else. I’ve always had my own businesses. That’s how I like it. I don’t think I’d have any problem working for someone else, but I’ve never had to because I’ve always worked hard to have my own restaurants, in Greece and in this country.
Creating these dishes is good for me, and good for others too. Creativity is an important part of what makes our food taste so good. Blending all the right spices with our fresh meats and vegetables allows me to create authentic Greek cuisine; that’s what I like to do.”
